The people of France are well known for their varied and distinctive style of cooking. Today, French cuisine is one of the most popular foods all around the world. One of the greatest reasons for the French cuisine gaining a lot of popularity is the constant changes brought about by centuries of political and social changes. During the Middle Ages France witnessed lavish and huge banquets organized by the upper classes. These banquets were popular for seasoned foods prepared by chefs like Guillaume Tirel. French revolution can be considered as the time period when the country witnessed a shift towards some varieties of spices along with herbs. The usage of these spices and herbs came after the invention of various refined techniques.

In later part of the 20th century Georges Auguste Escoffier codified the French Cuisine which came to be known as the modern version of haute cuisine. During the same time period Guide Michelin and Gastro tourism helped popularising the peasant and splendid bourgeois cuisine amongst the people moved towards the countryside. Basque cuisine is thought to have considerable amount of influence upon the cuisines prepared in the south-western side of France. Today, cuisines along with their ingredients vary from place to place. There are several types of regional cuisines which have national recognition in the recent times. Wine and cheese are considered to have considerable amount of influence upon the cuisines of France both and national and regional levels.

Structure of French meals

Typically French meals comprise of breakfast, lunch, dinner and drink.

Breakfast: This is a quick meal mostly comprising of butter and jam, croissants, eggs along with tea or coffee. Most of the youngsters are also found to take hot chocolate with the breakfast.

Lunch: In the past lunch was considered to be a two hour mid day meal but today, it is only a one hour affair. While some of the smaller towns still showcase a two hour lunch break. Sunday lunches are longer most of the times and taken along with the family. Students and working professionals in larger cities have lunches in schools and corporate cafeterias. These cafeterias typically serve the people with complete meals.

Dinner: This mainly comprises of three courses with soup as introductory followed by the main course along with dessert or cheese course. Sometimes people are also offered salad before desserts or cheese. Normally as a part of dessert the people are served fresh fruit while cheese course can also be replaced by yogurt. In the recent times the consumption of wine has been on a decline amongst the youngsters with increasing consumption of fruit juice. Meat courses also served along with vegetables and pasta or rice.

Drink: France has always been one of the greatest consumers of wine. While in the recent times the consumption of wine has been on a decline, most of the people still prefer drinking wine daily. Beer is very popular among the youth with consumption of low quality wine has been on a decline during meals.
